Spinach Stuffed Chicken Breast – 293 Calories

Ingredients
  • 4 chicken breasts
  • 1 tablespoon coconut oil
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 115g light cream cheese
  • 1/4 cup grated parmesan
  • 2 tablespoons mayonnaise
  • 1 1/2 cups chopped spinach
  • 1 teaspoon minced garlic
Method
  • Preheat fan forced oven to 190℃.
  • In a bowl mix paprika, 1/2 teaspoon of salt, garlic powder and onion powder. Sprinkle evenly over both sides of the chicken breasts.
  • Use a sharp knife to cut a pocket into the side of each chicken breast.
  • In a bowl mix cream cheese, Parmesan, mayonnaise, spinach, garlic and 1/2 teaspoon of salt. Stir well.
  • Spoon the mixture evenly into each chicken breast.
  • Bake for 18 minutes or until cooked through.
  • Makes 4 serve.
