Ingredients
- 4 chicken breasts
- 1 tablespoon coconut oil
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 115g light cream cheese
- 1/4 cup grated parmesan
- 2 tablespoons mayonnaise
- 1 1/2 cups chopped spinach
- 1 teaspoon minced garlic
Method
- Preheat fan forced oven to 190℃.
- In a bowl mix paprika, 1/2 teaspoon of salt, garlic powder and onion powder. Sprinkle evenly over both sides of the chicken breasts.
- Use a sharp knife to cut a pocket into the side of each chicken breast.
- In a bowl mix cream cheese, Parmesan, mayonnaise, spinach, garlic and 1/2 teaspoon of salt. Stir well.
- Spoon the mixture evenly into each chicken breast.
- Bake for 18 minutes or until cooked through.
- Makes 4 serve.
