Ingredients
- 750g extra lean beef mince (95% fat free)
- 1/4 cup tomato paste
- 2 cups beef stock
- 1 tbsp worcestershire sauce
- 1.2kg spud lite potatoes - peeled and cut into 2.5cm chunks
- carrot, celery and other vegetables to taste
Method
- Preheat fan forced oven to 180℃.
- Cook mince in a non-stick pan with a small amount of cooking spray. Cook over medium high heat until browned and add tomato paste.
- In a bowl mix stock and sauce and add to the mince.
- Cook potatoes in boiling water for 15 minutes or until soft. Drain and return to the pot. Use a masher to mash the potato.
- Add the mince to a casserole dish.
- Spread potato evenly on top of mince.
- Bake for 30-40 minutes or until golden brown.
- Makes 5 serves.
