- 45g eschallots chopped
- 180g red capsicum chopped
- 1 tin corn
- 300g fine cut coleslaw
- 220g pasta
- 50ml fat free mayonnaise
- 120g greek yoghurt
- 3g dijon mustard
Method
- Cook pasta according to instructions.
- Mix mayonnaise, yoghurt and mustard to make dressing.
- Combine pasta, dressing and vegetables.
- Makes 1 serve.
