Mushroom Risotto – 364 Calories

Ingredients
  • 700g microwave packet brown rice
  • 700g chicken breast
  • Dried porcini mushrooms soaked and diced (keep the water)
  • Diced brown mushrooms
  • Diced white mushrooms
  • 2 large diced brown onions
  • 4 cloves fresh garlic diced
  • 3 bunches broccolini diced
  • 210g 50% less fat grated cheese
  • Chicken stock
Method
  • Place a large pan on high heat. Add oil, onions, mushrooms and garlic.
  • Cook until mushrooms are softened and onions are translucent.
  • Add chicken and cook until just white. Do not cook all the way through.
  • Add the brown rice and porcini water and just enough stock to almost cover the ingredients.
  • Turn down the heat to simmer and continue to stir every few minutes.
  • When most of the liquid is gone add the broccolini .
  • When the liquid is all absorbed take off the heat and and add the cheese. Stir to combine.
  • Makes 7 serves.
