Ingredients
- 700g microwave packet brown rice
- 700g chicken breast
- Dried porcini mushrooms soaked and diced (keep the water)
- Diced brown mushrooms
- Diced white mushrooms
- 2 large diced brown onions
- 4 cloves fresh garlic diced
- 3 bunches broccolini diced
- 210g 50% less fat grated cheese
- Chicken stock
Method
- Place a large pan on high heat. Add oil, onions, mushrooms and garlic.
- Cook until mushrooms are softened and onions are translucent.
- Add chicken and cook until just white. Do not cook all the way through.
- Add the brown rice and porcini water and just enough stock to almost cover the ingredients.
- Turn down the heat to simmer and continue to stir every few minutes.
- When most of the liquid is gone add the broccolini .
- When the liquid is all absorbed take off the heat and and add the cheese. Stir to combine.
- Makes 7 serves.
