Ingredients
- 200g chicken breast
- 2 eggs
- 1/3 cup almond flour
- 1 cup grated reduced fat cheese
- 2 tablespoons finely chopped fresh basil
- 2 tablespoons chopped chives
- 2 tablespoons chopped parsley
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1 tablespoon coconut oil
Method
- Dice chicken and place in large mixing bowl.
- Stir in almond flour, eggs, cheese, basil, chives, parsley, garlic powder, salt. Mix well.
- Heat oil in a large fry pan over medium low heat. Using a dessert spoon scoop in spoonfuls of the chicken mixture to the pan. Use the spoon to flatten slightly into fritters.
- Cook until golden brown on both sides - 6 to 8 minutes.
- Makes 4 serves.
