Chicken and Cheese Fritters – 335 Calories

Ingredients
  • 200g chicken breast
  • 2 eggs
  • 1/3 cup almond flour
  • 1 cup grated reduced fat cheese
  • 2 tablespoons finely chopped fresh basil
  • 2 tablespoons chopped chives
  • 2 tablespoons chopped parsley
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1 tablespoon coconut oil
Method
  • Dice chicken and place in large mixing bowl.
  • Stir in almond flour, eggs, cheese, basil, chives, parsley, garlic powder, salt. Mix well.
  • Heat oil in a large fry pan over medium low heat. Using a dessert spoon scoop in spoonfuls of the chicken mixture to the pan. Use the spoon to flatten slightly into fritters.
  • Cook until golden brown on both sides - 6 to 8 minutes.
  • Makes 4 serves.
