Ingredients
- 840g chicken breast chopped into 2cm chunks
- 1 onion diced
- 3 cloves of garlic crushed
- 2 tsp curry powder
- 2 tsp of garam masala
- 1 tsp cumin
- 1/2 tsp cayenne pepper
- 1/2 tsp ground ginger
- 400ml Vitasoy light coconut milk
- 150g tomato paste
- 140g Chobani plain greek yoghurt
- Lime
- Coriander
- Microwave rice (125g per serve)
Method
- Place the chicken, onion, garlic, curry powder, garam masala, cumin, cayenne pepper and ginger into the slow cooker. Mix well making sure the chicken is coated.
- Add the coconut milk and tomato paste into the slow cooker. Cover and cook on low for 5 hours.
- Make the rice as per instructions on packet.
- Makes 7 serves.
