Butter Chicken – 316 Calories

Ingredients
  • 840g chicken breast chopped into 2cm chunks
  • 1 onion diced
  • 3 cloves of garlic crushed
  • 2 tsp curry powder
  • 2 tsp of garam masala
  • 1 tsp cumin
  • 1/2 tsp cayenne pepper
  • 1/2 tsp ground ginger
  • 400ml Vitasoy light coconut milk
  • 150g tomato paste
  • 140g Chobani plain greek yoghurt
  • Lime
  • Coriander
  • Microwave rice (125g per serve)
Method
  • Place the chicken, onion, garlic, curry powder, garam masala, cumin, cayenne pepper and ginger into the slow cooker. Mix well making sure the chicken is coated.
  • Add the coconut milk and tomato paste into the slow cooker. Cover and cook on low for 5 hours.
  • Make the rice as per instructions on packet.
  • Makes 7 serves.
