Beef Nachos – 438 Calories

Ingredients
  • 25g natural corn chips (Byron Bay or similar)
  • 100g tomato salsa (low salt, low sugar)
  • 25g light mozarella cheese
  • 200g extra lean beef mince (95% fat free)
  • 85g Chobani Greek Yoghurt
  • 5g taco seasoning
  • eschallots
  • Tomatoes
Method
  • Preheat fan forced oven to 180℃.
  • Cook mince in non-stick pan and add seasoning. Use a small amount of cooking spray.
  • Dice tomatoes and eschallots. Spread corn chips on oven proof dish.
  • Layer mince, tomatoes, cheese and half of the salsa on corn chips.
  • Cook in oven for 10-15min.
  • Remove from oven and add yoghurt, eschallots and remaining salsa.
  • Makes 1 serve.
