Ingredients
- 25g natural corn chips (Byron Bay or similar)
- 100g tomato salsa (low salt, low sugar)
- 25g light mozarella cheese
- 200g extra lean beef mince (95% fat free)
- 85g Chobani Greek Yoghurt
- 5g taco seasoning
- eschallots
- Tomatoes
Method
- Preheat fan forced oven to 180℃.
- Cook mince in non-stick pan and add seasoning. Use a small amount of cooking spray.
- Dice tomatoes and eschallots. Spread corn chips on oven proof dish.
- Layer mince, tomatoes, cheese and half of the salsa on corn chips.
- Cook in oven for 10-15min.
- Remove from oven and add yoghurt, eschallots and remaining salsa.
- Makes 1 serve.
