These apple cinnmon muffins are a great low calorie snack or dessert.
Ingredients
- 2 cups rolled oats
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 1/2 teaspoon cinnamon
- 2 eggs
- 1/4 cup sugar free maple syrup
- 1/3 cup almond milk
- 2 large apples peeled and chopped
Method
- Preheat fan forced oven to 180 degrees C and prepare lined muffin tin.
- Pulse oats in a blender until they are flour-like consistency. Add baking powder, baking soda and combine.
- In a separate bowl whisk together eggs, maple syrup and milk.
- Add this to blender with the dry ingredients and mix.
- Add the chopped apple and fold in.
- Pour batter into lined muffin tin. Fill 3/4 of the way.
- Bake for 20 min until golden brown.
