Shepherds Pie – 291 Calories

Ingredients
  • 750g extra lean beef mince (95% fat free)
  • 1/4 cup tomato paste
  • 2 cups beef stock
  • 1 tbsp worcestershire sauce
  • 1.2kg spud lite potatoes - peeled and cut into 2.5cm chunks
  • carrot, celery and other vegetables to taste
Method
  • Preheat fan forced oven to 180℃.
  • Cook mince in a non-stick pan with a small amount of cooking spray. Cook over medium high heat  until browned and add tomato paste.
  • In a bowl mix stock and sauce and add to the mince.
  • Cook potatoes in boiling water for 15 minutes or until soft. Drain and return to the pot. Use a masher to mash the potato.
  • Add the mince to a casserole dish.
  • Spread potato evenly on top of mince.
  • Bake for 30-40 minutes or until golden brown.
  • Makes 5 serves.
